Week Three - Define

We decided we wanted to pursue the corn chicken product option. We want to call our product Chick -O- Pop. The stuffed chicken was a product we thought was similar to other products already on the market. This week we prepared the corn chicken in a few different ways. Two of the chicken breasts we cut a small hole in so we could stuff it with cheese and bacon. The other four pieces we did not stuff, but we battered and breaded them differently. We decided to marinate the chicken with a hand injector and by soaking. We discovered that the stuffed corn chicken was too thick, so it took too long to cook and dried out the meat and the breading was dark and crumbly. Also, the chicken that was cooked in olive oil versus bacon grease the breading stayed on better. The product we liked the best was the first one that Makayla cut, battered and breaded shaped like a chicken. It was cut then lightly pre-dust and cooked for a few minutes on the stove top. This piece was not marinated before cooking. Then the popsicle stick was inserted, chicken was battered and it was fried until an internal temperature of 165℉.

The pre-dust contained all purpose flour, Tony’s, and pepper. The batter ingredients are yellow cornmeal, flour, egg, milk and honey. There was olive oil in the pan and used for frying. The marinade we used had olive oil, teriyaki, soy sauce, brown sugar, salt, pepper, garlic powder, lemon sauce and Worcestershire. Although we liked the taste of the marinade it did not work with our product. The combination of the bacon greasy and marinade made the breading soggy. Next week we plan to alternate the flour with either a rice flour or a potato starch. Then our product will be gluten free and be the trend “The Rise of Alternative Ingredients”.

The packaging for our corn chicken will be similar to how corn dogs are packaged. Corn dogs would be our competitive product. A 12 count of corn chicken in a sealed plastic bag inside of a cardboard box. The package will say the product contains 100% white chicken breast meat, real honey and no hormone or steroids added. Hopefully the rice flour or potato starch works with our product so we can add gluten free to the label as well. Our product is a RTE, frozen product so it is a trend for “The Ease to Please”. Our product is quick and easy geared for children, teenagers and college students.
